Washed. The women of Las Tejedoras have refined every step of their post-harvest process through years of education and experience.
Fermentation has been extended to 24–40 hours depending on the weather, using either concrete or plastic tanks. This slow, intentional fermentation develops brighter, fruitier notes and adds complexity to the cup.
Coffees are dried over 7–10 days, benefitting from up to 12 hours of diffused sunlight daily in Chiapas’s cloud-filtered environment.
