Nestled in the heart of Atwater Village, Proof Bakery has been a cornerstone of Los Angeles' pastry scene since 2010. Founded by Na Young Ma, a Culinary Institute of America alum, Proof quickly gained national acclaim for its exceptional pastries, including almond croissants and financiers .
In August 2021, Proof transitioned to a worker-owned cooperative, making it one of the few bakeries in Los Angeles to adopt this model . This shift reflects a commitment to sustainability, equity, and community—a philosophy that permeates every aspect of the bakery.
The coffee program at Proof is a testament to their meticulous approach. The coffee program is led by Jennifer, in collaboration with seasoned coffee professional James, the team employs a unique espresso preparation method: brewing at 201°F and 6 bars of pressure, 1:2 ratio of coffee to water pull, diverging from the standard 9 bars. This technique yields a longer espresso shot that is sweet, vibrantly pleasant and smooth on the finish.
