Grind a 2 KILO COFFEE bag on a very coarse grind setting into a paper Toddy filter
Tie the top of the paper filter with the provided string, leaving at least 8 inches of room from the coffee bed to the string. We need to leave room in the paper filter, because the coffee will release carbon dioxide, and the bag will expand. Without enough headspace, the paper filter will tear, releasing grinds and causing the final brew to be gritty and not properly extracted
Place the lid on the cambro, and let the cold brew steep for 20 hours
After 20 hours, take the silk filter, along with the paper filter full of coffee, and strain it through a cone filter
Let the coffee strain for 20 minutes, and then dump the paper filter, but keep the silk for future use
Dilute the cold brew concentrate with 8 quarts of water
This should give us a total of 16 quarts of cold brew
