From our origin visits deep in the fincas of Oaxaca and Veracruz the cupping table in Los Angeles, every step of the way is measured by curiosity, collaboration, and a commitment to Calidad.
It’s where we decide what to bring in, how to roast it, and whether it meets the standards of a Civil cup. Whether we're tasting fresh samples from Guerrero, evaluating a production roast of Civilian, or checking how a coffee holds up in storage, this ritual is a cornerstone of our sourcing and roasting process.
Cupping is how we honor the work of our producers.
But it’s more than numbers or notes. It’s about conversations—around the table, we’re tasting for sweetness, balance, clarity, or something unexpected that pulls us in. Every slurp is a spark, a moment to align on what we believe delicious Mexican coffee should taste like.
When we cup, we’re not just protecting quality. We’re protecting the legacy of coffee from México—an origin we love deeply and are proud to share with the world.
What Is Cupping? A Quick Breakdown
Cupping is the universal language of coffee quality. Here's how we do it at Civil:
Dose & Grind: Each coffee is measured precisely—usually 8.25g to 12g—and ground medium-coarse, just before evaluation.
Smell (Dry Fragrance): Before any water touches the coffee, we inhale the aromas to detect fruit, florals, spice, or roast character.
Wet & Bloom: Hot water is poured to steep the grounds. This activates the coffee’s volatile compounds and forms a crust.
Break the Crust: After 4 minutes, we break the crust of coffee grounds with a spoon, releasing more aroma for evaluation.
Clean the Top: We skim away foam and floating particles to create a clean surface for tasting.
Cool & Slurp: Once cooled to ~130°F, we slurp with force to spray the coffee across our palate, unlocking flavor, body, and finish.
Discuss: This is where the magic happens—our team compares notes, digs into preferences, and discusses sourcing decisions or roast tweaks.
